Sweet Potato Mixture
- 2½ cups mashed sweet potatoes
- ¼ cup butter
- ¾ cup sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 1 large egg, well beaten
Brown Sugar Pecan Crust
- ¾ cup brown sugar
- ¾ cup chopped pecans
- ¼ cup flour
- ¼ cup melted butter
Instructions
Preheat oven to 350° and butter a 2 quart baking dish. Set aside.
In a large pot of water over medium high heat, boil sweet potatoes until tender. Drain. Or bake at 400° for 50-60 minutes depending on the size of the sweet potatoes.
Using a medium bowl, combine sweet potato ingredients together and stir to combine thoroughly. Spoon mixture into prepared baking dish.
In a small bowl, stir all the crust topping ingredients together and spread evenly over the surface of the sweet potato mixture.
Bake uncovered for 30 minutes and let sit for 20 minutes before serving.
